Snowball Cupcakes
Ingredients: 2 2/3 cups cake flour 1 tablespoon baking powder 3/4 teaspoon salt 1-2/3 cups Domino® Granulated Sugar 3/4 cup butter or margarine, softened 3 eggs 1 1/2 teaspoons vanilla 1 cup milk 3 cups flaked coconut
Butter Cream Frosting: 1 (1-lb.) pkg. Domino® Confectioners Sugar (approx. 3 3/4 cups) 1/2 cup butter or margarine, softened 3-4 tablespoons milk 1 teaspoon vanilla Popsicle sticks (optional)
Directions: Preheat oven to 375°F. Line 24 muffin cups with paper baking cups.
In small bowl, stir together flour, baking powder and salt. Beat sugar and butter in large mixing bowl at high speed until light and fluffy. Add eggs one at a time, beating well after each addition. Add vanilla. Add flour and milk alternately, beginning and ending with flour, mixing on low speed. Fill muffin cups 2/3 full. Bake 18-22 minutes or until toothpick inserted in center comes out clean. Cool completely in pan. Prepare frosting.
Butter Cream Frosting: Combine in large bowl, sugar, butter, milk and vanilla. Beat at medium speed 1-2 minutes until creamy. If desired, add more milk until frosting is spreading consistency.
To make snowballs: Remove paper liners from cupcakes. Completely frost the cupcakes with frosting, then roll in coconut to make snowballs. If desired insert Popsicle sticks to eat on a stick.
MINI SNOWMAN CUPCAKES
Remove paper liners and slice each cupcake in half horizontally. Place cupcake halves on large aluminum foil-covered tray joining 2 halves together to make snowman shape. Frost snowman and sprinkle with coconut, if desired. Using assorted candies, decorate as desired. Use mini pretzel sticks for arms. Prepares 24 cupcakes.
