Pot of Gold A simple cheese sauce that is great as a dip for bread chunks, tortilla chips or raw vegetable pieces. Adds a great taste to baked potatoes or nachos.
Ingredients:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 1 cup milk
- 1 cup Cheddar cheese, shredded
Directions: Melt butter in a small saucepan over low heat. Slowly stir in flour and salt. Cook over medium heat, constantly stirring, until smooth and bubbling. Remove pan from stove and while mixture is still hot, slowly stir milk into the flour mixture. You must continue to mix quickly so that the milk is not cooked by the hot mixture. When all the milk is added, return the pan to the stove and bring to a boil -- stirring constantly. Let mixture boil for one minute, again stirring constantly. Stir in cheese until is is all melted. This makes a little over 1 cup of cheese sauce.

Ingredients:
- 1 pound lean ground beef
- 1 can (8 oz.) tomato sauce
- 1/4 cup ketchup
- 2 teaspoons mustard
- 1 cup all-purpose flour
- 1-1/2 teaspoons baking powder
- 2/3 cup milk
- 3 tablespoons butter, melted (margarine is okay)
- 1 egg
- More ketchup (optional)
Directions: Heat oven to 450 degrees F. Cook beef in frying pan over medium heat, stirring often, until brown. Drain excess fat. Stir in tomato sauce, 1/4 cup ketchup and mustard. Mix well and spoon into an ungreased 8-inch square pan. Stir in flour, baking powder, milk, butter and egg, using fork, until well blended. Pour over beef mixture and spread evenly. Do not mix with beef, leave layered. Spoon more ketchup over top and bake 18 to 22 minutes or until crust is a light golden brown. This makes 6 servings.
