Everyone seems to be baking cowboy cookies these days. If you haven't found a great recipe yet, try this one. You can cut the recipe in half if you want a smaller batch. I make the large batch and freeze half of the dough either in a large container or rolled into cookie size logs. I use a melon baller to scoop the dough out of the container while it is still frozen. If I have taken time to roll the logs, they are easy to cut into slices when slightly thawed and make nice round cookies when baked. Using one of these methods, I can quickly cook a pan of fresh cookies along with an oven meal.
Bake cookies at 350 F. for 8-10 minutes
1 cup butter
1 cup oil
2 cups white sugar
2 cups brown sugar
4 eggs
1 T. vanilla
1 tsp. salt
2 tsp. baking Soda
1 tsp. baking Powder
4 cups flour
4 cups oatmeal
1-1/2 cups milk chocolate chips
Cream butter, oil and sugars. Add eggs and beat until light and fluffy. Add remaining ingredients and mix until well blended. Drop by spoonful onto cookie sheets.
